Raw materials used

Common fruits are strawberries, raspberries, blueberries, apricots, peaches, plums, oranges, lemons and cherries.

In addition to the fruits, other herbal ingredients such as mint, lavender or flavours such as vanilla or cinnamon can be used to vary and refine the taste of the jam.

Colloid mills from Probst & Class in the production of jam

The use of colloid mills in the production of jam enables efficient crushing and grinding of the fruit and uniform mixing of ingredients. 

The cooked fruits are processed in the colloid mill to crush and grind them. In the grinding section of the colloid mill, hydraulic and mechanical cutting, impact, squeezing, friction and shearing forces act to thoroughly crush the fruit pieces and achieve a smooth texture. Depending on preferences, some jams may have a smooth texture while others may contain fruit pieces.

After the fruit is crushed in the colloid mill, sugar is added as a sweetener. In addition, a gelling agent such as pectin or gelling sugar is used to thicken the jam.

Production process

Processing and production can be carried out using Probst & Class mills and systems in a batch process or continuous in-line process, depending on the requirements. We also offer in-line deaeration systems for the extraction of air and other gases. This step is particularly relevant before packaging in order to achieve a clean atmosphere and to preserve the properties of the product in the best possible way.
