Mayonnaise Production using Probst & Class Colloid Mills

Mayonnaise is chemically an emulsion, a combination of water and fat. The emulsification process is the central procedure in mayonnaise production. Precisely controlled amounts of vegetable oil are mixed with egg yolk and water. The egg yolk acts as a natural emulsifier. In the same process, the mayonnaise is homogenised.

PUC colloid mills are particularly suitable as high-shear mixers for the emulsification and homogenisation of mayonnaise. A special advantage is the in-line emulsification provided by the mill. Thanks to high speeds and shear forces, mayonnaise is very quickly emulsified and homogenised in one process. This allows for high flow rates without the use of large mixing tanks. This process also ensures that every drop of mayonnaise has exactly the same consistency. Consistency and flow can be adjusted to meet the specific process requirements of the client through the use of gap settings and rotational speed adjustments.

Our mills are also very easy to clean and can be seamlessly integrated into the CIP process of the plant. Due to our decades of experience in the food industry, we can offer the optimal rotor-stator configuration for every client and application.

Production Process

Processing and production can be carried out with Probst & Class mills and systems either in batch mode or in a continuous in-line process, depending on the requirements.
