Examples of meat substitute products made with machines from Probst & Class
Tofu: Tofu is a popular meat substitute made from soya beans. It has a characteristic mild flavour and a versatile texture that allows it to be used as a meat substitute in various dishes.
Seitan: Seitan, also known as wheat gluten, is made from wheat protein. It has a fibrous texture and can be sliced or diced and used as a meat substitute in many dishes.
Soya meat: Soya meat or soya protein meat is made from soya protein and has a fibrous texture similar to meat. It comes in different forms such as strips, mince or cubes and is versatile.
Mushrooms: Mushrooms such as portobello, shiitake or oyster mushrooms have a meaty texture and can be used as a meat substitute in many dishes. They can be fried, grilled or used as a filling in burgers or sandwiches.
Pulses: Pulses such as beans, lentils and chickpeas can be used as meat substitutes in the form of burger patties, falafels or stews. They are rich in protein and fibre.
Gemüsebasierte Fleischersatzprodukte: Es gibt auch verschiedene Produkte auf Gemüsebasis, die als Fleischersatz dienen können, wie zum Beispiel Gemüseburger, Gemüsewürstchen oder Gemüse-Nuggets. Diese werden aus einer Kombination von Gemüse, Getreide, Hülsenfrüchten und Gewürzen hergestellt.
Process steps in the production of meat substitutes
First, the ingredients are prepared according to the recipe. This may involve soaking, cooking, pregrinding or mixing the ingredients to achieve a suitable consistency and texture.
The ingredients prepared in this way are crushed and ground in the colloid mill. The colloid mill uses its grinding and cutting mechanisms to thoroughly grind the ingredients and achieve a uniform consistency. This results in a meat-like texture. Spices and other flavourings can also be added at this stage to enhance the taste. After the ingredients have been processed in the colloid mill, they are mixed together in the desired proportions.
Production process
Processing and production can be done with Probst & Class mills and systems in a batch process or continuous inline process, depending on the requirements.
